Dark Chocolate and Coconut Cookies

I use to make these cookies regularly with my mum as a child, well more likely I would beg her to let me bake them. I love the combination of the tropical scented coconut against the bitter dark chocolate.



  • 125g softened unsalted butter
  • ½ teaspoon of vanilla extract
  • 1 cup of brown sugar
  • 2 eggs (at room temperature)
  • 2 cups of plain flour
  • 1 teaspoon of baking powder
  • 1 cup of desiccated coconut
  • 200g of dark chocolate (good quantity) broken into chunks



Preheat your oven to 190◦c. Using either a stand mixer, hand beaters or a whisk cream together the butter, sugar and vanilla until the sugar is completely dissolved into the butter and is no longer grainy.  Beat in the eggs one at a time until fully combined. Mix in the flour, baking powder and coconut gently using a spatula and then mix in the chocolate chunks. The mixture will be quiet stiff. Roll into tablespoon sizes balls and place on a large baking tray lined with grease-proof paper.  Place in the oven for 12-15 minutes or until slightly brown and they should spring back with touched. Leave to cool on a cooling rack. Enjoy with a cup of tea. The recipe should make 15 cookies.
