Dark Chocolate and Coconut Cookies
Preheat your oven to 190◦c. Using either a stand mixer, hand beaters or a whisk cream together the butter, sugar and vanilla until the sugar is completely dissolved into the butter and is no longer grainy. Beat in the eggs one at a time until fully combined. Mix in the flour, baking powder and coconut gently using a spatula and then mix in the chocolate chunks. The mixture will be quiet stiff. Roll into tablespoon sizes balls and place on a large baking tray lined with grease-proof paper. Place in the oven for 12-15 minutes or until slightly brown and they should spring back with touched. Leave to cool on a cooling rack. Enjoy with a cup of tea. The recipe should make 15 cookies.
